Besides Pattaya and the immediate areas north and south of it for 40 km, I've been all around Koh Chang, Kho Samui, Koh Samet, Phuket island, Krabi, Koh Yao, Hua Hin and the Similan Islands. Only the Similan Islands were truly different because they are a National Park and not supposed to be developed.
Anywhere there is or was development quickly becomes a mini-Pattaya with a whole string of beach huts and businesses. In more populated areas the big hotels move in and move the "little people" out.

I am sure there is a couple secluded beaches that are nice but if it becomes a well known area the Thais don't have any real planning and the beach towns get overrun and ugly
I am trying to think of any beach town in Thailand I think of as a nice beach town and I can't come up with one
Maybe Baan Krut
Koh Phayam has nice West facing beaches that are clean and great for swimming and doesn't actually have a town just some rustic bars and restaurants.
A beach needs to have clean water and some sort of wave action for it to rate for me.
Nai harn and surin beaches are good too.
