    If Thai pork dishes hard to disagree....they have fantastic pork dishes
    (Although a lot of Americans would highly disagree)

    ^ I've actually never had something like this in Thailand. Looks similar to the Chinese BBQ pork.

    What's this dish called? Keen to try.

    Looks like pork neck which is the best cut for slow roast/bbq and usually cut into straps for chinese red pork - easy to do at home with LOBO red pork marinade, then slow roast or bbq in oven style with meat not over direct flame.

    I love the fresh peppercorns in any dish - stir-fry or stew

    Bee would be familiar with the dish below which uses both pork neck and peppercorns, prepared southern-style paste available from Kamala market >


    gaaeng phet luuk thoong phaak dtai

    INGREDIENTS



    • 400 gr pork neck meat
    • roasted southern curry paste (see below)
    • 2 tablespoons kapi (fermented shrimp paste)
    • 1/2 cup young galangal juliennes
    • 1/2 tablespoon palm sugar
    • 1 1/2 tablespoons fish sauce
    • 7 pcs fresh peppercorns
    • 1/2 cup kaffir lime leaves
    • oil, rice bran
    • 1-2 cups water or pork stock

    ROASTED SOUTHERN CURRY PASTE

    • 1 tablespoon black peppercorns, roasted
    • 3 pcs long peppercorns, roasted
    • 4 dry long red chilies, roasted
    • 7 dry bird’s eye chilies, roasted
    • 1 teaspoon salt
    • 1/2 cup lemongrass, thinly sliced
    • 2 tablespoon coriander root, thinly sliced
    • 1/3 cup galangal, thinly sliced
    • 1/3 cup garlic, thinly sliced
    • 6 cm fresh turmeric root

    Wife enjoys trying new recipes, especially using local produce, so she couldn't resist a tamarind leaf salad ... aloi mak!

    Ingredients apart from fresh picked young tamarind leaves, included a spicy chicken mince similar to nam prik ong, and ground pork crackle ...

    Correct, if wrapped in a betel leaf, as it translates as 'snack' [one bite wrap]. However any filling can be wrapped in betel leaves, often rice+nam prik, the leaf keeps one's fingers clean and is also nutritious.
