I'm surprised we don't have a lively thread on the subject. I'm pretty sure there's an old, smelly one floating around, but I couldn't find it. So if mods know about it, please merge. That with this please, not this with that. Mine's sexier.
I'll start off with my recent favourite. The second time I've tried this very reasonably priced Tuscan red at around $24AUD. It has an almost old, fermented aftertaste, like good cheese. I've tried my best to rely on my own senses and findings with this, so I could be off the mark. But this to me would go hand in hand with a bolognese, as it almost has a nice parmigiana thread running through it. I can almost sense oregano in the back of my throat as well, but that could just be my brain adding in from memory. In which case the wine is still doing a great job filling in detail that isn't there, which I've experienced in the past.
