    So:

    - Deep fry at 350C for 3-4 minutes per side
    - Oven bake at 20-C for 30 minutes
    - Continue to roast at (internal temperature) 120C for 1 to 1.5 hours
    - Fry again at 350C - 2 minutes per side this time.

I think it is fair to say that the concept of eating a steak rare (or medium rare - my favourite) has not yet reached "Bon Appetit"

As a former restaurateur (note no "n" - 200 seats) that is a great big wank.
Firstly - that is a "T-Bone" - further down as the filet side disappears it is a "Wing steak".
Porterhouse has been widely discarded as it means different cuts to different nationalities.

All you need is up to a 100 days dry aged beef (cut the black ends off).
Cook on a hot charcoal grill for 2 minutes a side, turning once (add 1 minute per side if bone in) for rare.
Add 1 minute per side for each gradation from there - medium rare on the rare side, medium rare, medium etc.
If they ask for well done - suggest something else.
Season after it is cooked- ground black pepper may be an exception.

Anybody that adds any sauce (tomato, BBQ) other than red wine/mushroom gravy gets charged double.

Next you'll be posting recipes for my ex FIL's favourite - Chicken fried steak!

Deep fried steak.... WTF is up with you 555.

2" thick steak on a charcoal BBQ. Cook it on it's edge, fat first until reduced by half then seared 2 minutes each side. Rest wrapped in foil for 10 minutes. Guaranteed blue... perfect.

Rumaging around in the bottom of the pantry this morning....... hooo look at this. 2004 Te Mata Estate Awatea Cabernet Merlot

Forgot all about this one, stashed in behind the potato bin.

I think that charcoal bbq is coming out this afternoon. Big fat steak and salad should go rather nicely with a couple of glasses of this helping it down.

Why did it come out sideways ??? when the photo was taken in portrait
