Asian Beef Casserole

Serves 4

Star Anise and Hoisin Sauce impart an alluring aroma during cooking and make this French-style casserole more Asian, more unique, and absolutely delicious


Ingredients:

1 cup Plain flour
Salt and Pepper
750g Stewing steak, trimmed of fat and cubed
Cooking oil
2 Onions, diced
2 Carrots, cut into 10mm thick pieces
2 Celery stalks, thinly sliced
2 Garlic cloves, crushed and chopped
1½ tsp Fresh ginger, grated or finely chopped
1 tbsp Hoisin sauce
1 cup Red wine
¾ cup Beef stock
2 Star anise
2 Bay leaves
Fish sauce


Method:

1. Place beef, flour and seasoning into a plastic bag, twist top to close and shake to coat beef cubes.
2. Heat oil in a pan, wok or large saucepan, and brown meat over high heat in batches to avoid stewing, set meat aside.
3. Add onion, carrot and celery - sweat down and allow onion to caramelise lightly before adding garlic and ginger.
4. Transfer meat and vegetables to an oven-proof casserole dish (or pressure-cooker**).
5. Stir in Hoisin sauce, wine, beef stock, star anise and bay leaves.
6. Cook, covered, at 180C for 1½ - 2 hours or until beef is tender.
7. Remove from oven and add a splash of fish sauce to adjust seasoning to taste.

Tip: Use quality Hoisin Sauce only, eg: Lee Kum Kee brand.
** 40 minutes cooking time in Pressure Cooker.

Any good beef around your way, Ted :??:

I've been using Thai beef from Makro with good results. When Jo asked the butcher 'what cut is this' in Thai, on my behalf ... the helpful young man replied to the effect 'like rubber, no good for frying' 555

Pay a little more for Thai-French beef - it comes from Limousin-Charolais crosses farmed up your way - cheaper than imported beef and you can get the stewing cuts - chuck etc

Looks like a slant on beef bourguignon, lol

Try Wagyu topside beef, rice flour, sh!take' mushrooms and shao-xing wine(a good Chinese drinking one) to really easternize the recipe!
then call it beef claypot........
