Fresh Salmon Spaghetti

Fresh Salmon fillets are readily available here and as poached fish with chillis and lime is popular I added this here.
I recently "inherited" a heap of frozen Norwegian Salmon fillets in 200 gm packs so I'm looking at different ways to use them.
This is an amalgam of several recipes but mostly "flying by the seat of your pants".
Tried it last night and it's bloody good.

THE BOSS’S FRESH SALMON PASTA
INGREDIENTS for SALMON:
100 gm fresh/frozen Salmon fillet per person, skin off.
I small clove minced garlic per serve
Quarter cup white wine + quarter cup water per serve
Coarse salt & cracked black pepper
Lemon or Lime (minaow)
Chillies optional
1 TSB butter per serve.
METHOD:
Rub the Salmon fillets with lime, salt and cracked pepper.
Heat a deep skillet (2” or more) with wine, water, minced garlic (and chillies) bringing to a boil and reducing to a simmer.
Add the Salmon (and any juices) and cover to poach gently.
Approximately cooking times for salmon:
1/4 to 1/3-inch - 3 to 4 minutes
1/2 to 3/4-inch - 4 to 6 minutes
1 to 1 1/2-inch - 8 to 12 minutes
Remove the Salmon and place on a plate for flaking.
SPAGHETTI:
Prepare your favourite spaghetti to taste (with salt and olive oil) while poaching the Salmon.
EXTRAS:
I chopped spring onion per serve
I small chopped roma tomato per serve
Chopped fresh basil to taste
SAUCE:
Reduce the poaching mix to about one-third and swirl in the butter and simmer
Add the spring onion, basil and tomato for 2 minutes
Add the spaghetti
Add the flaked Salmon and mix thoroughly and serve, adding parmesan cheese to taste.

P.S the TG loved it and I see she's taken the leftovers for lunch 555!

Maybe not...

For me no delete function is cruel and unusual treatment.
Everybody deserves a second chance ...
